Instructions
- Brew 1 cup of strong coffee or espresso and let it cool slightly. Add sugar to dissolve.
- In a bowl, mix mascarpone cheese and vanilla extract until smooth.
- In another bowl, whip heavy cream to stiff peaks; gently fold into the mascarpone mixture.
- Quickly dip ladyfingers in the cooled coffee and layer them in your serving dish.
- Spread half the mascarpone mixture over the ladyfingers and top with half of the raspberries. Repeat the layers.
- Cover and refrigerate for at least 4 hours or overnight. Before serving, dust with cocoa powder.
