- Β½ cup crumbled feta cheese

Instructions
- Wash and chop 2 cups of fresh spinach. Crumble Β½ cup of feta cheese.
- In a bowl, whisk together 4 large eggs; season with salt and pepper.
- In a non-stick skillet over medium heat, add 1 tablespoon of olive oil and sautΓ© the spinach until wilted (about 2 minutes).
- Pour the whisked eggs evenly over the spinach and let cook undisturbed for 2-3 minutes until edges set.
- Sprinkle crumbled feta on one half of the omelette, fold it over once the bottom is set but top is still slightly runny, and cook for another minute.
- Slide onto a plate, garnish with fresh herbs if desired, and enjoy warm!
