Ingredients

  • 2 cups fresh spinach
  • Β½ cup crumbled feta cheese
  • 4 large eggs
  • 1 tablespoon olive oil

Instructions

  1. Wash and chop 2 cups of fresh spinach. Crumble Β½ cup of feta cheese.
  2. In a bowl, whisk together 4 large eggs; season with salt and pepper.
  3. In a non-stick skillet over medium heat, add 1 tablespoon of olive oil and sautΓ© the spinach until wilted (about 2 minutes).
  4. Pour the whisked eggs evenly over the spinach and let cook undisturbed for 2-3 minutes until edges set.
  5. Sprinkle crumbled feta on one half of the omelette, fold it over once the bottom is set but top is still slightly runny, and cook for another minute.
  6. Slide onto a plate, garnish with fresh herbs if desired, and enjoy warm!
