Ingredients
- 8 oz fusilli or penne pasta
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 red onion, thinly sliced
- 4 oz feta cheese, crumbled
- 1/2 cup black olives, pitted and sliced
- 1/4 cup fresh parsley, chopped
- 1/4 cup extra virgin olive oil
- Juice of 1 lemon
- 2 cloves garlic, minced
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions in salted water until al dente. Drain and rinse under cold water.
- While the pasta cooks, chop the vegetables: halve cherry tomatoes, dice cucumber and bell pepper, and thinly slice red onion.
- In a small bowl or jar, whisk together olive oil, lemon juice, garlic, oregano, salt, and pepper.
- In a large mixing bowl, combine cooked pasta with chopped vegetables. Drizzle with dressing while gently tossing until well coated.
- Fold in crumbled feta cheese and sliced olives just before serving.
