  • 1 lb ground turkey or beef (lean)
  • 1 cup cooked brown rice
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 cup tomato sauce

Instructions

  1. Preheat the oven to 375°F (190°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sauté the onions until translucent, about 5 minutes. Add garlic and cook until golden.
  3. Stir in ground meat and cook until browned. Mix in cooked rice, cumin, paprika, and allow to meld flavors for about 10 minutes.
