  • 1 kg Fresh Grated Carrots
  • 4 cups Whole Milk
  • 3/4 cup Sugar (adjust to taste)
  • 1 tsp Cardamom Powder
  • 2 tbsp Ghee (Clarified Butter)
  • Chopped Nuts (Cashews & Almonds)
  • Sultanas or Raisins (soaked)

Instructions

  1. Grate the carrots finely using a box grater or food processor.
  2. In a heavy-bottomed pan, heat ghee over medium heat and sautΓ© the grated carrots for 5-7 minutes until softened.
  3. Add whole milk and simmer on low heat for about 30-40 minutes, stirring occasionally until most liquid evaporates.
  4. Stir in sugar and cardamom powder; continue cooking for another 10-15 minutes until thickened.
  5. Mix in toasted nuts and soaked raisins before serving warm or chilled.
