  • 4 boneless, skinless chicken breasts (approx. 600g)
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 medium red onion, cut into large chunks
  • 2 tsp garlic powder
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tbsp freshly squeezed lemon juice
  • Wooden or metal skewers (if using wooden skewers, soak in water for 30 minutes)

Instructions

  1. Cut the chicken into bite-sized pieces. In a bowl, mix soy sauce, olive oil, honey, garlic powder, lemon juice, and black pepper. Add chicken and marinate for at least 30 minutes.
  2. While marinating, chop bell peppers and red onion into uniform pieces.
  3. Thread chicken and veggies onto skewers alternately for a colorful presentation.
  4. Preheat grill to medium-high heat (375°F/190°C). Grill skewers for 10-15 minutes until chicken is cooked through and lightly charred, turning occasionally.
  5. Brush additional marinade on during the last few minutes of grilling for extra flavor.
