  • 1 pound lean ground turkey
  • 1 cup cooked rice (white or brown)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté chopped onions in olive oil until translucent. Add minced garlic and cook until fragrant.
  3. In a bowl, mix cooked rice, ground turkey, diced tomatoes, sautéed onions, and garlic until well combined.
  4. Slice off the tops of each bell pepper and remove seeds. Stuff each pepper with the turkey mixture.
  5. Place stuffed peppers in a baking dish with a splash of water at the bottom to keep them moist. Cover with foil and bake for 30 minutes.
  6. If using cheese, uncover and sprinkle on top after 30 minutes. Bake uncovered for an additional 10-15 minutes until cheese is melted.
