Ingredients

  • Canned chickpeas
  • Whole wheat tortillas
  • Fresh spinach
  • Cucumbers
  • Diced tomatoes
  • Red onion
  • Tahini sauce
  • Lemon juice
  • Dried oregano
  • Pine nuts (optional)

Instructions

  1. Drain and rinse canned chickpeas until no foam appears.
  2. In a bowl, mash chickpeas with lemon juice, tahini sauce, oregano, salt, and pepper until chunky.
  3. Fold in fresh spinach, cucumbers, diced tomatoes, and red onion until well mixed.
  4. Lay a tortilla flat and spoon the chickpea mixture onto one side.
  5. Tightly roll the tortilla from one end to the other, folding in the sides as you go.
  6. Slice diagonally for a beautiful presentation.
