- 4 large flour tortillas
- 6 fresh eggs
- 4 strips bacon or 1 cup cooked sausage
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 1 cup diced bell peppers
- 1/2 cup diced onion
- 1/2 cup salsa
- Salt & pepper to taste
Instructions
- Gather and chop the onions and bell peppers.
- In a skillet over medium heat, cook the bacon or sausage until crispy. Drain excess grease, leaving some for flavor.
- Add onions and bell peppers to the skillet; cook until soft (4-5 minutes).
- Whisk eggs with salt and pepper, then pour into the skillet with veggies. Cook gently until just set.
- Place a tortilla flat, spoon in the egg mixture and cheese in the center.
- Fold in sides of the tortilla and roll tightly from bottom to top.
