Ingredients

  • 4 large flour tortillas
  • 6 fresh eggs
  • 4 strips bacon or 1 cup cooked sausage
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1 cup diced bell peppers
  • 1/2 cup diced onion
  • 1/2 cup salsa
  • Salt & pepper to taste

Instructions

  1. Gather and chop the onions and bell peppers.
  2. In a skillet over medium heat, cook the bacon or sausage until crispy. Drain excess grease, leaving some for flavor.
  3. Add onions and bell peppers to the skillet; cook until soft (4-5 minutes).
  4. Whisk eggs with salt and pepper, then pour into the skillet with veggies. Cook gently until just set.
  5. Place a tortilla flat, spoon in the egg mixture and cheese in the center.
  6. Fold in sides of the tortilla and roll tightly from bottom to top.
