  • 1 cup green or brown lentils
  • 2 medium carrots, diced
  • 2 celery stalks, diced
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 4 cups low-sodium vegetable broth
  • 1 tsp ground cumin
  • 1 tsp dried thyme
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Dice the onion, carrots, and celery into small pieces.
  2. In a large pot over medium heat, warm olive oil. Add the diced onions and sauté until translucent (about 5 minutes).
  3. Add the carrots and celery; sauté for another 5 minutes until softened.
  4. Stir in minced garlic along with cumin and thyme; cook until fragrant (about 30 seconds).
  5. Add lentils and crushed tomatoes (juice included), stirring well to combine.
  6. Pour in vegetable broth, bring to a boil, then reduce heat to simmer uncovered for 30–40 minutes until lentils are tender.
  7. Taste regularly and adjust seasoning with salt and pepper as needed.
  8. Serve hot with crusty bread or alongside salads for a fulfilling meal!
