- 2 medium carrots, diced
- 2 celery stalks, diced
- 1 onion, diced
- 3 garlic cloves, minced
- 1 can (14.5 oz) crushed tomatoes
- 4 cups low-sodium vegetable broth
- 1 tsp ground cumin
- 1 tsp dried thyme
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Dice the onion, carrots, and celery into small pieces.
- In a large pot over medium heat, warm olive oil. Add the diced onions and sauté until translucent (about 5 minutes).
- Add the carrots and celery; sauté for another 5 minutes until softened.
- Stir in minced garlic along with cumin and thyme; cook until fragrant (about 30 seconds).
- Add lentils and crushed tomatoes (juice included), stirring well to combine.
- Pour in vegetable broth, bring to a boil, then reduce heat to simmer uncovered for 30–40 minutes until lentils are tender.
- Taste regularly and adjust seasoning with salt and pepper as needed.
