Instructions
- Preheat your oven to 350°F (175°C) and line cupcake pans with paper liners.
- In a large bowl, whisk together flour, sugar, baking powder, and salt until well combined.
- In another bowl, beat softened butter until creamy. Gradually add sugar and mix until light and fluffy.
- Add eggs one at a time, then stir in milk and strong brewed coffee until smooth.
- Fill liners about two-thirds full with batter and bake for 18–20 minutes or until a toothpick comes out clean.
- For the mascarpone frosting, whip together mascarpone cheese and vanilla extract; gradually add powdered sugar to taste.
- Let cupcakes cool completely before frosting generously with mascarpone frosting. Dust with cocoa powder before serving.
