Ingredients

  • Fresh tomatoes
  • Onion
  • Garlic
  • Vegetable broth
  • Heavy cream (or coconut milk)
  • Fresh basil
  • Sugar
  • Salt and pepper

Instructions

  1. Prep your ingredients: Wash and quarter the tomatoes, finely dice the onion, and mince the garlic.
  2. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add onions and sauté until translucent, about 5 minutes. Stir in minced garlic for an additional minute.
  3. Add tomatoes: Mix in chopped tomatoes with sugar, salt, and pepper. Cook until softened, approximately 10 minutes.
  4. Pour in broth: Add vegetable broth to cover the tomatoes. Bring to a gentle boil, then reduce heat and simmer uncovered for 20 minutes.
  5. Blend until smooth: Remove from heat and blend using an immersion blender or transfer to a countertop blender until silky.
  6. Finish with cream & basil: Return to low heat, stir in heavy cream or coconut milk until heated through, and add fresh basil before serving warm.
