- 4 large bell peppers
- 2 cups cooked rice
- 1 pound ground turkey or 1 can black beans
- 1 medium onion, chopped
- 1 cup tomato sauce
- 1 cup shredded cheese (mozzarella or cheddar)

Instructions
- Preheat oven to 375Β°F (190Β°C). Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, sautΓ© onions in olive oil until translucent (about 5 minutes).
- Add cooked rice and ground meat or beans to the skillet. Stir in spices until well mixed and heated through.
- Stuff each pepper generously with the mixture and place upright in a baking dish.
- Pour tomato sauce over the peppers and sprinkle cheese on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
