Ingredients

  • 4 large bell peppers
  • 2 cups cooked rice
  • 1 pound ground turkey or 1 can black beans
  • 1 medium onion, chopped
  • 1 cup tomato sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • cumin, paprika, salt, and pepper

Instructions

  1. Preheat oven to 375Β°F (190Β°C). Slice the tops off the bell peppers and remove seeds.
  2. In a skillet over medium heat, sautΓ© onions in olive oil until translucent (about 5 minutes).
  3. Add cooked rice and ground meat or beans to the skillet. Stir in spices until well mixed and heated through.
  4. Stuff each pepper generously with the mixture and place upright in a baking dish.
  5. Pour tomato sauce over the peppers and sprinkle cheese on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake an additional 10 minutes until cheese is bubbly.
