- 4 large bell peppers (any color)
- 1 pound lean ground beef
- 1 cup cooked rice
- 1 can (14.5 oz) diced tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove seeds.
- In a skillet over medium heat, sauté onion and garlic until soft (about 3-5 minutes).
- Add ground beef to the skillet and cook until browned.
- Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper; mix well.
- Stuff each pepper with the beef mixture until overflowing.
- Place in a baking dish with a little water, cover with foil, and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes until tops are golden brown.
