  • 1 pound lean ground beef
  • 1 cup cooked rice
  • 1 can (14.5 oz) diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, sauté onion and garlic until soft (about 3-5 minutes).
  4. Add ground beef to the skillet and cook until browned.
  5. Stir in cooked rice, diced tomatoes, cumin, paprika, salt, and pepper; mix well.
  6. Stuff each pepper with the beef mixture until overflowing.
  7. Place in a baking dish with a little water, cover with foil, and bake for 30 minutes.
  8. Remove foil and bake for an additional 10 minutes until tops are golden brown.
