  • 1 cup green or brown lentils
  • 2 large sweet onions
  • 3 cups vegetable broth

  • Salt & pepper to taste

Instructions

  1. Rinse the rice under cold water until clear.
  2. In a large skillet, heat olive oil over medium heat. Add sliced onions and sautΓ© until caramelized (15-20 minutes), stirring frequently.
  3. Stir in rinsed lentils, cumin, and cinnamon; cook until fragrant.
  4. Add rinsed rice and vegetable broth; bring to a gentle boil.
  5. Reduce heat to low, cover tightly, and simmer for 20 minutes until rice and lentils are tender.
  6. Remove from heat, let sit covered for 10 minutes, then fluff with a fork and top with caramelized onions.
