Ingredients

  • Yellow onion
  • Garlic
  • Tomato paste
  • Canned tomatoes
  • Green or brown lentils
  • Canned chickpeas

  • Lemon juice

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onion until soft and translucent.
  2. Stir in minced garlic and spices; cook until fragrant.
  3. Add tomato paste and canned tomatoes; simmer for 10 minutes.
  4. Mix in lentils and chickpeas with vegetable broth. Bring to a boil, then reduce heat and simmer uncovered for 30 minutes until lentils are tender.
