Instructions

  1. Rinse lentils under cold water until clear. Dice carrots and onion; mince garlic.
  2. In a large pot over medium heat, add a splash of oil. SautΓ© onion until translucent (about 5 minutes), then add garlic.
  3. Stir in sliced carrots and cook for an additional 5 minutes until slightly softened.
  4. Add rinsed lentils, drained tomatoes, broth, cumin, paprika, salt, and pepper; bring to a boil.
  5. Reduce heat to low, cover partially with a lid, and simmer for about 30 minutes until lentils are tender.
