- 3–4 boneless, skinless chicken breasts (about 1.5 lb)
- 2 tbsp chipotle peppers in adobo sauce
- 1/2 cup ranch dressing
- 4 large flour tortillas
- 1 cup sliced bell peppers
- 1/2 cup sliced onions
- 1/4 cup fresh cilantro
- 2 tbsp lime juice
- 1 tsp garlic powder
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Mix olive oil, chipotle peppers, lime juice, garlic powder, salt, and pepper. Add chicken and marinate for at least 30 minutes.
- Preheat the grill to medium-high (375°F). Grill each side of the marinated chicken for about 6-7 minutes until fully cooked.
- In a pan over medium heat, sauté bell peppers and onions with olive oil until tender, about 5-7 minutes.
- Remove chicken from the grill and let it rest for five minutes before shredding.
