Ingredients

  • Fresh beets
  • Goat cheese
  • Arugula
  • Walnuts
  • Balsamic vinegar

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap washed beets in aluminum foil and roast for 45-60 minutes until tender.
  2. Once cool, peel the roasted beets and slice into rounds or cubes.
  3. Rinse and dry arugula; place it on a serving platter as the base.
  4. Crumble goat cheese over the arugula, then layer with sliced beets.
  5. Toast walnuts in a dry skillet until golden brown; sprinkle over the salad with salt and pepper.
  6. Drizzle olive oil and balsamic vinegar over the salad just before serving, then gently toss everything together.
