Ingredients

  • 2 medium zucchinis
  • 1 cup all-purpose flour (or whole wheat)
  • 2 large eggs

  • Cooking oil (canola or olive)

Instructions

  1. Grate the zucchinis and squeeze out excess moisture using a clean towel.
  2. In a bowl, mix grated zucchini, flour, eggs, chopped herbs, garlic powder, salt, and pepper until well combined.
  3. Shape small patties about 2-3 inches wide.
  4. Heat oil in a skillet over medium heat and fry fritters for 3-4 minutes on each side until golden brown.
  5. For the yogurt dip, mix Greek yogurt with lemon juice and season with salt and pepper.
